White Birch Cafe & Bistro has opened at Red Tree Lodge in Fernie, bringing a fresh new gathering place to the community from Victor and Karlea Spicer, the local owners of Elk Valley Catering.
The new cafe and bistro is built around a simple idea: create a welcoming, refreshing space where people can gather, connect and enjoy great food with genuine hospitality. For Fernie residents and visitors, White Birch offers another local option for breakfast, brunch, meetings, celebrations and future evening events.
The opening menu leans into comfort, creativity and quality ingredients. Guests will find a strong breakfast and brunch focus, including Classic Eggs Benny, Smoked Salmon Benny, Bison Benny, Truffled Mushroom Benny and Jackfruit Benny, all served with brown butter hollandaise, pavé hashbrowns and salad.
The Bison Benny is already a standout, with BBQ braised bison chuck, poached egg and arugula creating a rich, savoury breakfast that feels well suited to Fernie. The Turkish Eggs are another favourite, served with poached eggs, harissa chili oil, cumin yogurt, fried chickpeas, pavé and sourdough toast. It is the kind of dish that adds something different to the local breakfast scene.
The menu also includes stacked pancakes, French toast, mushroom toast, brekky sandwiches and kids breakfast options. Vegetarian, vegan, gluten-free and dairy-free options are also part of the menu, giving White Birch broad appeal for families, locals, travellers and groups with different dietary needs.
For Victor and Karlea, White Birch is more than a cafe. It is the next step in their hospitality work in Fernie after building Elk Valley Catering. Their long-term vision includes expanding into lunch service, baking programs, curated pop-up dinner events, and game or hobby evenings that bring people together beyond the regular cafe experience.
Located inside Red Tree Lodge, White Birch also offers a private meeting space equipped with a projector, making it suitable for board meetings, corporate gatherings, presentations and small group events. The space can also accommodate weddings and special occasions, adding another flexible venue option for the Fernie area.
Opening a new restaurant is no small task, and the first few weeks of work have already shown the scale of the ambition behind White Birch. But the foundation is strong: experienced local owners, a thoughtful menu, a welcoming space and a clear commitment to community.
